 Earth balance butter (soy free) for greasing the pan.
 6 Eggs
 1 cup Maple syrup
 ¼ cup Extra virgin olive oil
 2 tsp Almond extract
 1 tbsp Lemon zest (zest of 2 lemons)
 5 cups Almond flour (not almond meal)
 1 cup Raw sliced almonds

Preheat the oven to 350 F. Grease a 9-inch springform cake pan with the earth balance.

In a large mixing bowl, whisk together the eggs, maple syrup, oil, almond extract, lemon zest, and salt. Add the almond flour and stir until thoroughly combined.

Pour the batter into the cake pan and sprinkle the sliced almonds over top. Bake in the center of the oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

Cool the cake in the pan on a wire rack. Carefully slide a thin knife around the edges of the cake and remove the pan's sides. Slide the knife underneath the cake to loosen and transfer it to a serving dish.

SIDENOTES:

- A nice variation is to use a chocolate frosting instead of the sliced almonds. I used Pamela's dark chocolate frosting mix (gluten, dairy, and soy free). It was super yummy!

-If you do use sliced almonds make sure the package says "gluten free" if you are very sensitive. Many nuts are packaged in facilities that also process gluten so the gf nuts can be hard to find.
